Sake brewer`s challenge I-Sake&Beer making in Kyoto, Japan

Back to Tokyo, Japan and my new beer hourney has just begun!! I visited Kyoto, which was the former capital city in Japan for more than 1,000 years. Although the current capital is Tokyo, Kyoto has an authentic Japanese and still is a Japanese spritual city with tradiotional culture and temples.

Everybody knows Japanese sake is one of the most famous sprits in Japan. Nowadays, beers are on the top position instead of sake. Sake breweries have been facing the challenge and difficulty due to people`s pallet/trend change from sake to beers and other alternative drinks.

Probably to solve this issue and expand their business, some Japanese sake breweries has started the production of Japanese craft beers!! That is very unusual sake breweries are producing both sake and beers as in England I have not seen beer breweries producing both beers and whisky? ciders? gins? Very interesting discovery!!

I visited one sake brewery called `Kinshi-Masamune`, which is the same name as one Japanese famous sake brand. They have started brewing beers (bitter and pilsner) in a traditional machiya-style house, and water is from their well in the yard. Yes, for the production of both sake and beers, water is one of the most important factor. In Kyoto, there is a historically-famous fresh water. You can enjoy tasting beers, sake and walking in a traditional house. Very highly recommend!!
